A fresh mix of summer flavours finished off in a Korno grill with binchotan coals to give it that perfect grilled flavour. I picked up my yakitori set from Sundays Grocery as they have everything you will need to make the perfect yakitori at home.
Serves 4
Ingredients
– 300g organic chicken thighs, minced
– Yakitori bamboo sticks soaked in water for several hours
Marinade
– 2 lemongrass, finely chopped
– 2 shallots, finely chopped
– 1 garlic, finely chopped
– 1 teaspoon sesame oil
– 1 teaspoon soft brown sugar
– 2 tablespoon oyster sauce
– 1 tablespoon fish sauce (Red Boat)
Method
1. Mix the marinade in a bowl until well incorporated.
2. Massage the marinade with the meant and let it sit in the fridge for at least 2 hours.
3. Remove from fridge and form the meatballs on the skewer and return to the fridge for another 2-4 hours.
4. Heat up the Korno grill and once the grills are hot, place the meatballs and cook. Make sure the meat is cooked well before turning them, otherwise they may stick on the grill.
5. Remove, let it rest for a few minutes and serve.
