
Ingredients
250 grams of bean sprouts rinsed
1 tsp fine salt for the water
5 cups of water (for boiling)
Seasoning mixture
2 tsp finely chopped spring onion
1/2 tsp garlic, finely minced
1 tsp sesame oil
1 tsp roasted sesame seeds
1/2 tsp Sea Salt
Method
Since the bean sprouts in cold water discarding any bad beans.
Boil water and add the fine salt. Once boiling blanch the bean sprouts and remove in after 1.5 min.
Drain and run cold water over the bean sprouts for 2 minutes or blanch into an ice water bowl for 1-2 minutes and drain.
Let sit in the colander for about 5 minutes.
In a medium bowl combine all the seasoning ingredients and mix well.
Squeeze the bean sprouts carefully with your hands to remove excess water. Do them in batches for better results.
Put the bean sprouts into the bowl with the mixture and mix well.
Taste and adjust with more sea salt if needed.
