
This classic pesto recipe is so tasty and fresh, make it, keep it and use it when you want to enjoy a delicious bowl of creamy pesto pasta.
Ingredients
1/4 cup pine nuts, lightly toasted
1/2 garlic clove, roughly chopped
1/2 cup grated Parmesan
Roughly 3 cups of basil leaves
1/2 tsp sea salt
1/4 cup good quality extra-virgin olive oil
Method
- Pound the garlic with a pinch of sea slat in a pestle and mortar until it forms into a paste.
- Add the basil leaves and then bash to make a paste.
- Then add the pine nuts and pound again.
- Pour the oil into the mixture and give it a stir until it mixes through.
- Then add the Parmesean cheese and stir. Feel free to add more oil or cheese until you have the right consistency.
- Season with salt and pepper to taste.
You can prepare a day in advance if you plan to use it for a pesto pasta. Just add little olive on the top when sealing it in a jar to ensure it doesn’t brown.
