Homemade Pesto

This classic pesto recipe is so tasty and fresh, make it, keep it and use it when you want to enjoy a delicious bowl of creamy pesto pasta.

Ingredients

1/4 cup pine nuts, lightly toasted
1/2 garlic clove, roughly chopped
1/2 cup grated Parmesan
Roughly 3 cups of basil leaves
1/2 tsp sea salt
1/4 cup good quality extra-virgin olive oil

Method

  1. Pound the garlic with a pinch of sea slat in a pestle and mortar until it forms into a paste.
  2. Add the basil leaves and then bash to make a paste.
  3. Then add the pine nuts and pound again.
  4. Pour the oil into the mixture and give it a stir until it mixes through.
  5. Then add the Parmesean cheese and stir. Feel free to add more oil or cheese until you have the right consistency.
  6. Season with salt and pepper to taste.

You can prepare a day in advance if you plan to use it for a pesto pasta.  Just add little olive on the top when sealing it in a jar to ensure it doesn’t brown.
